While searching for a recipe that included potatoes and pita, we discovered a Bosnian pastry (pita sa krompirom) in which a potato and onion mixture is baked into a type of pita. We changed the recipes we found to make our own version.

Ingredients:

Pita

Olive Oil

Potato

Onion

Spices

Arugula

Feta

Dice the potatoes and onions into very small pieces. Place in a bowl, and mix thoroughly with olive oil and spices (we used Mt. Eolus Greek Style Seasoning from Savory Spice). Bake the mixture for one hour, or until the potatoes are tender. Place the mixture onto pieces of pita, along with arugula and feta cheese (or whatever else you would like to add). We found our vegetarian creation to be a fun and tasty recipe that we plan on making again soon.
