We discovered this recipe by happenstance. We went to the grocery store and picked up all of our ingredients for the next few days, or so we thought. After we chopped up the tomatoes and the onion for some Pico De Gallo, we discovered we forgot cilantro. So we were left with chopped up food ready to be used, but unsure what to make. Then we thought this could make a refreshing quesadilla!

Ingredients:

-1/2 packet of Grape Tomatoes chopped

-1/2 Onion diced

-4 Small Corn Tortillas

-1/4 Cup of Mozzarella Cheese (or whatever you like-we use mozzarella a lot because it is healthier than a lot of other cheeses)

-Sprinkle of Peruvian Chile Lime Seasoning

Chop up the tomatoes & onions into small pieces and place onto a corn tortilla. Next add cheese across the tortilla to your liking. We use sprinkle cheese so we can evenly distribute a thin layer. Afterwards sprinkle some Peruvian Chile Lime Seasoning and place a second tortilla on top. Heat it up for a few minutes on the burner or in a toaster oven and you are left with a refreshing and flavorful quesadilla!
