During Lent we always give up meat, so we continue to look for creative and healthy recipes that we can have even after Lent is over. We discovered while driving that there are not a lot of healthy options for those on road trips. One of the only healthy options was the veggie delight at Subway, and we both enjoyed it so much we decided to make our own version that we eat year round now.
-Sourdough bread or ciabatta rolls
-Peppers (various colors)
-Cheese (whatever you like)
–Greek Seasoning, Herbs de Provence, or something similar
-Olive Oil & Balsamic Vinegar or Malt & Vinegar
Put as much or as little of each ingredient that you like, and you are left with a hearty, healthy, and meat free sandwich. This is one of our absolute favorites, and we continue to play around with veggies and seasonings to add.
