Margaret’s favorite childhood meal that her mother made was pasta salad, and we love to have it during the summer for a refreshing, but filling meal.
-Red, Yellow, & Orange Peppers
-2 Large Tomatoes
Begin by boiling the Rotini noodles. While the noodles are cooking, chop up the peppers, onions, and tomatoes. Once the noodles are done, let them cool for awhile, and then add the peppers, onions, tomatoes, and salad dressing. We typically add most of the Italian dressing bottle; however, add the salad dressing based on your personal tastes. Afterwards, you are left with a refreshing summer meal.
