We had a jar of pickles leftover, so we just threw a couple things together to create this potato salad. It was surprisingly tasty.
6-8 medium potatoes
Half an onion
Half a jar of dill pickles slices
1/4 cup of pickle juice
3/4 -1 cup of Greek yogurt
2 tsp dill
Dash of salt and pepper to taste
This recipe is fairly easy. Start by boiling the potatoes until they are cooked through. Next, allow them to cool, and then peel the potato skins and dice into small pieces. Simply add all of the ingredients together in a bowl with the potatoes, and place into the refrigerator for a couple hours. Afterwards, you are left with a dill pickle potato salad. This recipe seems ideal for the summer time.
