Recipe Week-Day 4

As the year turns to the winter months, you’ll probably want some comfort foods that keep you warm and cozy. We found just such a recipe and were amazed at how tasty it was.


Olive oil

Boneless, skinless chicken (breast, thighs, tenders)

Salt and pepper to taste

1 diced onion

20 sliced garlic cloves

2 tsp thyme

2 Tbs flour

1 cup chicken broth

1/2 cup parmesan cheese

Cook the chicken in olive oil until brown, and then set aside. Saute the onion and garlic cloves in the oil until lightly browned. Add the thyme and flour, and cook until thickened. Add the chicken broth, and stir well. Then, add the parmesan cheese to the sauce, and season with salt and pepper, as well as any other spices you want to add. Add the chicken back to the sauce. Either simmer over low heat for 15 minutes, or cover the pot, and roast in the oven at 400 degrees for 15 minutes. This dish was quite easy to make, but delicious-after dinner, we were full and warm, yet still wanted more. This is a perfect dish to try this winter, enjoyed by the fire and some great company.
