Running low on groceries, we wanted to use up some odds and ends so we made this shockingly flavorful and hearty meal.
Chicken tenders or breasts
Preheat the oven to 425 degrees. Cut the ends of the brussels sprouts off and place them on a pan. Next cut each of the baby potatoes in half and place them on the pan. If there is a larger potato make sure to make it smaller to ensure it cooks evenly. Sprinkle a few baby carrots on the pan as well. We put the veggies and potatoes around the outside of the pan and then placed the chicken in the center of the pan. Evenly drizzle olive oil and homestead seasoning on the entire pan and its contents. Then place in the oven for 15 minutes. Take out the pan and flip all the veggies and potatoes and sprinkle a little more seasoning on based on your preference. Put back in the oven for an additional 15 minutes. You are then left with a hearty, easy to make, delicious meal. Enjoy!
