We found a recipe similar to this but changed it to ensure it was healthier and created this fantastic one dish meal that left us fulfilled with a savory dinner.

Ingredients:

(2 servings)

-Half a pack of chicken tenders

-4 to 6 medium butter potatoes

-Garlic powder

-Onion powder

-Oregano

-Parsley

-Basil (we used dried basil form our garden!)

-Thyme

-Celery Salt

-Dash of Salt

-Pepper

-Dash of sugar

-Drizzle of Olive Oil

Preheat the oven to 370 degrees. While the oven is heating up, chop the potatoes into small pieces. We used little butter potatoes that worked perfectly! Place the potatoes and chicken onto a pan. Next, drizzle olive oil on top of the pan, covering both the potatoes and the chicken. In a separate bowl, mix the blend of spices. We used around a teaspoon of each spice and herb, but there really wasn’t a specific measurement, as we typically add spices and herbs to taste. Blend the herbs and spices, and then sprinkle the mixture on top of the chicken and potatoes. Place the pan in the oven for around 22 minutes. You are left with a phenomenal dish that is easy to make, filling, and healthy.
