In an attempt to make snap peas a little more tasty, we came up with this recipe that is great for end of spring, summer, and early fall. Hopefully you enjoy!
Garlic (2-4 cloves based on size of cloves and preference)
Sugar Snap Peas
Tomatoes (preferably cherry or roma)
Pinch of salt
Start by placing olive oil in a pan at a low heat. While the olive oil heats up mince up the garlic and throw it into the pan. After all of the garlic has been added, bring up the temperature and let it heat up for a couple of minutes. Next, after washing off the snap peas, add them to the pan. Then, sprinkle pepper and Italian seasoning into the pan. While the snap peas are heating up, chop up the tomatoes. Place the tomatoes into the pepper, add a pinch of salt and again sprinkle pepper and Italian seasoning to taste. An option you can add is mint leaves (fresh ones from the garden really add a pop to the meal). Once the tomatoes are slightly cooked, remove the pan from the heat and place directly into serving bowls and sprinkle feta on top. The meal is then ready to serve and you are left with a light and flavorful meal. We paired it with chicken in Ethiopian seasoning from our favorite spice store, Savory Spice.
