Our household meals are often centered around garlic and Parmesan, garlic for some snappy flavor and Parmesan for some cheesy goodness. Combining two of our meal loves with potatoes and a whole load of herbs, we wound up with a tasty treat.


-Potatoes (half a bag of red potatoes)

-Olive Oil

-Garlic powder or minced garlic






-Salt (a dash)

Let’s get started! Begin by preheating the oven to 375 degrees and drizzle olive oil over a baking pan. As the oven heats up, rinse off your potatoes and cut them into small little bites. We cut our potatoes down to fairly small pieces, making it easy to get numerous potatoes in each bite. After we cut up the potatoes we placed them in a bowl and drizzled olive oil and mixed the potatoes until they each had a slight coating of olive oil. Next, we added garlic powder, thyme, parsley, oregano, pepper, and just a dash of salt. All of the seasonings we just sprinkled until everything seemed evenly coated. We don’t follow a recipe much or a a specific portion, we just season everything we make to taste. Additionally, we are not very big salt people, so typically we only have a dash or two of salt as we prefer meals without any salt. Afterwards, we mixed everything together and then placed the seasoned potatoes onto the pan. Next, we grated Parmesan cheese over the potatoes until they were all covered in a light dusting of cheese. Then, we placed the pan in the oven for 30 (ish) minutes (depending on your stove). Personally, we recommend checking around 20 minutes due to a variance in stoves and the size of your potatoes. The bigger your potatoes, the more time you will need. We cooked the potatoes until they were slightly browning and had a little crisp to them. The potatoes turned out incredible! We found them absolutely delicious, and the olive oil on the base of the pan helped to cook them underneath as well, creating a beautiful golden color. Each bite was as savory and delightful as the last. We highly recommend trying this potato recipe for a hearty night of home cooked meals.
