While living in the Czech Republic, one of Margaret’s favorite recipes that was popular in the region there was garlic soup that was absolutely delicious. Looking up a few variations of this recipe, we blended a few different recipes and this is the garlic soup we created.
Potatoes (2 medium potatoes)
Garlic (10-12 cloves)
Onion (1/2 onion)
Vegetable Broth (1-2 cups)
Water (optional one cup)
Salt & pepper (sprinkle)
Flour (optional to thicken soup)
First you will cook the potatoes, peel them, and cut them into small pieces. Afterwards place the potatoes to the side, while you prepare the soup. Next saute the onions and garlic and then you will slowly add the broth. If you would like the soup thicker or thinner you add either water or flour. Continue to add broth and then add the potatoes and cook until warm. Afterwards add salt and pepper to taste. Once the soup is heated and flavored as you wish, enjoy! For additional flavor and perhaps a little crunch, we added some of our homemade croutons and savored our delicious garlic soup.
