This is a very simple recipe for black bean soup. While we plan on trying different recipes in the future, this one was quick, easy, and allowed us to try black bean soup to make sure we liked it before spending an hour making a more involved version. This simple recipe, however, ended up being quite tasty.

Ingredients:

2 cans of black beans, drained and rinsed

1 1/2 cups of chicken broth

1 cup salsa

1 tsp. cumin

3 cloves garlic, finely chopped

chili powder, to taste

Place all the ingredients into a pot. Bring to a light boil, and then simmer for 15 minutes. In this recipe, we left the beans whole, which we enjoyed, but you can blend them before placing them in the pot if you prefer. This is another recipe with which you can get creative. Try different types of salsa, experimenting with new spice combinations, or adding some vegetables, such as onions or peppers. While we haven’t tried it yet, this would also be a great recipe to throw into the crockpot if you wanted a more blended soup. We would recommend pairing this with something else, but you could also eat it by itself for a meal.
