Cinque Terre, Italy is home to pesto and while we were visiting we had it almost every single day. Margaret especially went pesto crazy, since Cinque Terre primarily serves sea food and she does not eat anything that comes from the water. Her staple diet while in Italy consisted of pesto, gelato, and pizza (it was fantastic). The pesto was so delicious that since being married we sought after how to create it for ourselves. The recipe is easier than we thought, but allows us to travel back to the Mediterranean and savor the delicious pesto.
Basil Leaves (we just go snip these from our garden, but if our plant is low Trader Joes sells fresh basil)
3/4 cup Pine Nuts
2 Garlic Cloves
1/2 cup Grated Parmesan
1/4 cup Olive Oil
Like standard pasta, boil water and then place pasta into the water to cook it. While the pasta is softening, combine and blend the basil, pine nuts, and garlic. Slowly add the oil and Parmesan to the create a thick liquid. Once the pasta is finished, simply add the pesto to your pasta and your meal is complete! You can always add ingredients of your own for a little pow of taste, such as salt and pepper. We have this meal at least once a month now and absolutely love it. We look forward to pesto night each time it is written on the meal calendar!
